Yellow Pea Soup and Swedish Pancake Supper
The American Scandinavian Association at Augustana will host its traditional winter Yellow Pea Soup and Swedish Pancake Supper. Todd Linscott of the Friends of Hauberg Civic Center Foundation will speak.
The evening begins with social time and punch at 5:30 p.m. Dinner will be served at 6. The menu includes yellow pea soup, including a vegetarian version, Swedish mustard, apple red cabbage salad, limpa and Swedish rye bread, cheese, cookies, Swedish pancakes and lingonberries, and decaf coffee.
The Friends of Hauberg Civic Center Foundation is working to restore the Jens Jensen Garden at Hauberg. Jensen was born in Denmark in 1860 and immigrated to America in 1884. He was a key figure in the creation of the Prairie Style of landscape. He also was a driving force in establishing the Cook County Forest Preserve District and the Illinois park system. Linscott will speak about Jensen's his influence locally at Hauberg.
